Summery coco lemon balls

When the sun is beaming, and you just want a quick and refreshing morning bite, these little balls will be ready in five minutes and be a joy to snack on.

For this recipe you will only need:
-1 lemon
-120g dates
-100g cashew nuts
-25g chia seeds
-30g desiccated coconut
These ingredients will make 12 balls. Each ball contains 105 calories, 2.1g protein, 9.8g carbs and 6.3g fat.

At first, you are going to prepare the lemon. Press and grate the entiere lemon. Keep 2 tbsp of juice and the zest on the side.

In a blender, mix all the other ingredients except 10g of coconut, transfer them to a dish and add the lemon.

Knead your mix until it's a dough, make 12 little balls and roll them in the leftover coconut.
Tadaammm, your tasty little balls are ready!
